Mexican-Italian mashup


Wow! I really took quite the hiatus from this blog. It feels good to start posting again. These pepperoni quesadillas are a tasty way to make a comeback. They are unique and delicious! Using corn tortillas is a must. I used the 6-inch tortillas, but the bigger ones would work, too. These quesadillas are great for lunch or dinner, served alongside some healthy veggies or fruit.




THE RECIPE:

Corn tortillas
Spaghetti sauce or pizza sauce
1 package pepperoni slices*
Shredded cheese

Heat an electric skillet to 400-425 degrees. Lay several slices of pepperoni on skillet -- enough for one batch. (For example, I laid out 10 slices, because I needed five slices per 6-inch tortilla and could only cook two tortillas at a time.) Don't cook all the pepperoni at once, because you need each batch to have its own drippings. Cook pepperoni until they release their drippings and become crispy. Using tongs, remove pepperoni from skillet to a plate lined with a paper towel. 

Swirl tortillas around in pepperoni drippings, then top half of each with sauce, a little cheese, cooked pepperonis, then a little more cheese. Doing two layers of cheese helps the quesadillas stick together. Fold over. Cook a couple minutes on each side, until golden and crispy. In the meantime, push them off to the side and start cooking the next batch of pepperoni to move things along.

Let finished quesadillas cool on paper towels, then enjoy!




*I often look for ways to reduce fat and sugar, but the reduced-fat pepperoni just didn't work in this recipe. They didn't release any drippings, and the corn tortillas really need oil in order to taste right and crisp up.

Note: This recipe is made with ingredients that are generally gluten-free, but be sure to check labels of particular brands.

Super fast fish tacos


If you are looking for a really easy dinner, make fish tacos using frozen fish sticks! My husband and I loved these. There is a delicious sauce that you can adapt to suit your tastes. The version below is very mild but very flavorful. And, of course, you can use whatever toppings you have on hand. The fish sticks take about 20 minutes to bake, but other than that, there's very little time commitment. The sauce tastes better the longer it refrigerates, so make it first. Don't we all love achieving great results with very little effort?

THE RECIPE:

20 frozen fish sticks, baked according to package directions
10 6-inch tortillas (I used flour)

Optional toppings:

Corn
Chopped tomatoes
Shredded cheese
Lettuce, spinach or cabbage
Green onions
Cilantro

Sauce:

1/4 c. sour cream
1/4 c. mayonnaise
1/4 c. milk
1 tsp. lime juice
1/8 tsp. each chili powder, cumin, salt, onion powder, garlic powder and dried basil

Mix sauce ingredients and refrigerate for at least 30 minutes before using. Assemble tacos as desired, using two fish sticks per tortilla. Top with sauce.

Homemade refried beans


I made my own refried beans the other day. I'm not in love with refried beans, but I thought these homemade ones tasted better than the ones in the can. I used them in seven-layer dip -- a huge win -- and then we ate the dip for dinner. Some nights are just like that.

These refried beans are all-natural and fat-free. They are very easy to make. Most of the work is done in a slow cooker. The beans can be frozen for later use -- tacos, burritos, etc. Making them at home is a good way to use the dried beans you have in your food storage. The recipe came from Mel's Kitchen Cafe.

THE RECIPE:

1 lb. dry pinto beans, rinsed and sorted for any stones
1 tsp. salt
1 yellow onion, cut into large chunks
4 large cloves garlic, smashed
2 cans diced green chilies
1 Tbsp. vinegar
1 1/2 tsp. salt
Chili powder to taste
Cumin to taste

Place beans in large saucepan with plenty of room and cover with water by at least an inch. Bring to a boil and cover, cooking for 15 minutes. Drain beans, then place in slow cooker and cover with water by 2 inches. Add 1 teaspoon salt, onion and garlic. Cover and cook on high for 4 to 6 hours.

When beans are tender, ladle out a cup of cooking liquid and set aside before draining remaining liquid. Puree beans and veggies, along with vinegar and green chilies, with an immersion blender OR in a food processor. Add reserved liquid as needed until desired consistency is reached. I only needed about 1/4 cup. Add remaining 1 1/2 teaspoons salt, and add chili powder and cumin to taste. The final product has a mild flavor. Makes 5 1/2 cups.

Best Spanish rice


This is an extremely easy and delicious recipe for Spanish rice. We make it all the time. It's fantastic! On nights when I want to go meatless, I have served this rice as the main dish with a bunch of veggies on the side. The recipe came from Lizzy Writes.

THE RECIPE:

2 Tbsp. olive oil
1 small onion, diced
1 1/2 c. uncooked long-grain white rice*
2 c. chicken broth
1 c. salsa (I used mild Pace Picante)

In a pot over medium-high heat, cook onion in oil for a couple of minutes. Add rice and cook until it starts to brown, stirring frequently. Stir in chicken broth and salsa. Cover, reduce heat to low, and simmer for 25 minutes, or until rice is tender. No need to check until the end. Stir and serve.


*Obviously this would be healthier with brown rice, but it would require some important adjustments, and I haven't taken the time to make them. Let me know if you give it a whirl.

**If you want this recipe to be gluten-free, then be sure to check your chicken broth.

Simple, yet satisfying


This is just a simple, mild, kid-friendly recipe for white bean chili. It uses pantry ingredients, and it's meatless, because I like to try to reduce the amount of meat we eat every week. My entire family gobbled this right up. Add whatever toppings make you happy -- crushed tortilla chips, avocado chunks.....

THE RECIPE:

2 cans Great Northern beans, rinsed and drained
1 can corn, drained
1 4-ounce can chopped green chiles, NOT drained
1 medium onion, chopped
2 c. chicken broth
1/2 tsp. each salt, chili powder, garlic powder, oregano
1 1/2 tsp. cumin
1/4 c. cream
1 c. shredded cheese

In large pot, mix beans, corn, chiles, onion, broth and seasonings. Bring to boil, then cover, reduce heat and simmer 45 minutes so flavors can combine. Stir in cream and cheese. Serves 4.

Pie for dinner

I am always on the lookout for meatless main dishes. Beans are a great way to add fiber and protein to your diet without all the fat, cholesterol and expense of meat. This tamale pie, from Better Homes and Gardens, fit the bill. It made for a yummy and fast weeknight dinner. It is also a great recipe for using canned food storage.

THE RECIPE:

1 c. chopped green sweet pepper
1/2 c. chopped onion
2 cloves garlic, minced
1 Tbsp. cooking oil
1 15-ounce can kidney beans, rinsed and drained
1 15-ounce can pinto beans, rinsed and drained
1 6-ounce can (2/3 cup) vegetable juice, such as V8
1 4-ounce can diced green chile peppers, undrained
1/2 tsp. chili powder (the original recipe called for 1 teaspoon, but we're wimps)
1/2 tsp. ground cumin
1/4 tsp. salt
1 8-ounce package corn muffin mix, such as Jiffy, and required milk and egg
1/2 c. shredded cheddar cheese
1/4 c. chopped fresh cilantro

Grease a 2-quart square baking dish or 10-inch quiche dish and set aside. In a medium skillet, cook sweet pepper, onion and garlic in hot oil until tender. Stir in beans, vegetable juice, chile peppers and seasonings; heat through. Spoon bean mixture into prepared dish.

Prepare corn muffin mix according to package directions. Add cheese and cilantro, stirring until just combined. Spoon batter evenly over bean mixture. Bake, uncovered, at 400 degrees for about 20 minutes, or until golden. If desired, serve with salsa and sour cream. Serves 6.

Little red jewels

This is a fun new twist on an old favorite. Pomegranate guacamole is a concept my lovely cousin Kristy introduced to me. I make it differently every time, according to what I have on hand, and you can do the same. You can add tomatoes, but I kind of like to let the pomegranate go solo. I just always make sure to include the coriander, because its fruity undertones complement the pomegranate nicely.

THE RECIPE:

3 ripe avocados, mashed
3 Tbsp. lime juice
1-2 Tbsp. finely diced red onion
1 clove garlic, pressed (add another if you like spice)
1/2 tsp. ground coriander
1/2 tsp. salt
1 Tbsp. finely chopped cilantro leaves
Seeds from half a pomegranate*

Whip together thoroughly first six ingredients, then stir in cilantro and pomegranate seeds. Refrigerate about an hour so flavors can mix.

Enchiladas with texture

I have been making these creamy almond-chicken enchiladas for years now. The recipe is from Better Homes and Gardens and calls for cream of chicken soup. I don't like to use cream soups very much in my cooking -- we are trying to be healthier -- but I keep them in my food storage. This recipe is a great reason to use canned foods. I absolutely love the addition of almonds. They give great texture.

THE RECIPE:

4 c. diced chicken breasts
3/4 c. slivered almonds
1/2 c. chopped onion (sometimes I use green)
2 4-ounce cans diced green chilies
6 oz. cream cheese
2 Tbsp. milk
1/2 tsp. ground cumin
10 flour tortillas
2 15-ounce cans cream of chicken soup
12 oz. sour cream (I used light)
2 c. milk
1 1/2 c. shredded cheese

In large skillet, cook chicken. Add onions and 1/2 cup of the almonds, then saute. Add 2 tablespoons green chilies. In a medium bowl, combine cream cheese, 2 tablespoons milk and cumin. Add chicken mixture. Spoon into tortillas, then roll and place side by side in 9x13 baking dish. In medium bowl, combine soup, sour cream, 2 cups milk and remainder of chilies. Pour over tortillas. Cover and bake at 350 degrees for 35 minutes. Sprinkle with cheese and remaining 1/4 cup almonds. Bake, uncovered, 5 minutes more. (Sometimes I put the cheese in the tortilla filling instead.)

Hidden veggies

Here's a name you've probably never heard -- sweet potato enchiladas. I adapted the recipe from one at allrecipes.com. It is a meatless dish, which I'm always happy about. We're trying to be a little healthier around here. The filling is surprisingly good -- creamy and flavorful. My husband and 2-year-old really liked this meal. I'm still interested in tweaking it. I'm not a huge fan of canned red enchilada sauce, so I've got to come up with an alternative. In the comments on the original recipe, some people mentioned substituting green sauce. We'll see! I actually think this filling might be good in the baked taquitos we love. Let me know if you try it, and if you have any successful tweaks.

THE RECIPE:

2 large sweet potatoes, peeled and cubed
1 8-ounce package reduced-fat cream cheese
4 green onions, thinly sliced
1 1/2 tsp. chili powder
1 tsp. ground cumin
1 1/2 tsp. dried oregano
1 tsp. salt
1/4 tsp. black pepper
10 corn tortillas
1 10-ounce can red enchilada sauce
1/4 c. reduced-fat sour cream
Shredded cheese

Boil sweet potatoes until tender, 15 to 20 minutes. Drain, then mash them with cream cheese, onions and seasonings. Heat oven to 350 degrees and grease 9x13 pan. Heat three tortillas at a time between two damp paper towels in microwave for about 45 seconds. (This way, they won't crack when you roll them.) Place about 1/3 cup of filling in each tortilla, then roll and place seam-side down in baking dish. Whisk together enchilada sauce and sour cream, then pour over enchiladas. Cover with shredded cheese. Bake for about 30 minutes, or until cheese is beginning to brown.

It's OK to eat with your hands

These chicken taquitos make a fun, quick and delicious dinner. I am a huge fan! Even kids seem to like them. Plus, they're baked instead of fried, which increases their health value. You could make the filling ahead of time and refrigerate it. I got the recipe from My Kitchen Cafe, although I tweaked it according to the ingredients I had on hand. Dip them in salsa, sour cream and guacamole.

THE RECIPE:

4 ounces low-fat cream cheese, softened
1/4 c. green salsa (I used red)
1 Tbsp. lime juice
1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp. onion powder
1/4 tsp. garlic powder
3 Tbsp. chopped cilantro*
1 green onion, finely sliced
2 c. chopped cooked chicken
1 c. shredded cheese

Corn tortillas
Salt
Cooking spray

Heat oven to 425 degrees. Line baking sheet with foil and spray with cooking spray. Mix filling ingredients in order. Place three tortillas between damp paper towels and microwave for 45 seconds until really pliable. Place about 3 Tbsp. mixture near edge of tortilla and roll up fairly tightly. Place seam-side down on baking sheet. Spray tops lightly with cooking spray and sprinkle with salt. (The original recipe recommends kosher salt.) Bake about 15 minutes, or until crispy and golden on edges.

*I didn't have cilantro, but they were still delicious. I love cilantro, though, so I will try it next time.

Award winner

I won third place at our church's chili cook-off with this cilantro-lime chili. Person after person told me how much they loved it, which made me feel so good! I also love that it is a vegetarian dish, but no one notices. It tastes best after it has been refrigerated and then reheated. I used bell peppers and tomatoes from my garden, which you may not have, so feel free to tweak the recipe to your liking.

THE RECIPE:

Splash of olive oil
1 large bell pepper, cleaned out and chopped
5 c. chopped fresh tomato*
Salt and pepper to taste
1 can fat-free refried beans
1 can black beans, rinsed and drained
1 can kidney beans, rinsed and drained
1 can corn, drained
2 packages taco seasoning
1 package dry Italian dressing
1 tsp. chili powder
1 Tbsp. vinegar
1 c. beef broth
1/4 c. packed brown sugar
1/4 c. lime juice
1/2 bunch cilantro (stems removed), finely chopped
Avocado, if desired
Chips, if desired

Over medium-high heat, cook peppers in olive oil for a couple of minutes. Add tomatoes, salt and pepper, beans, corn, seasonings, vinegar, broth and brown sugar. Mix well, then bring to a boil. Cover and reduce heat. Simmer for 30 to 45 minutes. Stir in lime juice and cilantro. Cook 10 minutes more. Cool and refrigerate for a few hours. Reheat and serve with sliced avocado and crushed tortilla chips.

*Note: I have made this twice. The first time, I added an 8-ounce can of tomato sauce. The second time I did not, because my tomatoes were very ripe and meaty and juicy. So, basically, do whatever you want.

Fajita fiesta

We made some really yummy chicken fajitas the other night. One of the best parts was a big old helping of fresh fried bell peppers from our garden. They added a light crunch and a nice punch of flavor. The other tasty part was the creamy sauce for the chicken. We just mixed salsa with cream cheese, and it tasted great.

THE RECIPE:

Sliced bell peppers
Splash of olive oil
Salt and pepper to taste
Garlic powder to taste
2 chicken breasts, sliced into inch-wide strips
1/4 c. cream cheese, softened*
1 c. salsa*
Tortillas
Desired toppings (chopped tomato, avocado)

In frying pan, toss peppers with olive oil, salt and pepper, and garlic powder. Fry over medium heat until crisp-tender. It takes about ten minutes. Meanwhile, in a different pan, cook chicken, then toss with cream cheese and salsa until well coated. Layer chicken and sauce, then peppers and additional toppings on a tortilla. Wrap it up, and enjoy!

*Note: I'm not sure about the amounts I used for my sauce, so this is just a guess. The consistency of your salsa will make a difference. It should be pink when it's ready.

The whole enchilada

An easy way to make run-of-the-mill enchilada sauce is to combine canned red sauce and canned tomato soup. The soup mitigates the spice a little bit for us wimps, although I still think it's a little spicy. I am the wimpiest of the wimps, though. Above, I just made plain old cheese enchiladas, but they are lightning fast to put together, and with the toppings, they make a great weeknight dinner.

THE RECIPE:

8 flour tortillas
Shredded cheese
1 10-ounce can red enchilada sauce
1 10-ounce can condensed tomato soup
Desired toppings

Fill tortillas with cheese and roll. Place in baking dish. Mix sauce and soup well, then pour over tortillas, ensuring that sauce sinks down to bottom of dish. Top with extra cheese. Bake at 350 degrees for 30 minutes. Serve with sour cream, lettuce, etc. if desired.

Homemade fast food

These little Mexican-style calzones are basically homemade fast food. They were good -- nothing fancy -- but good for a night when I didn't have much energy left. My family liked them. I'm sure you could make them Italian-style, with spaghetti sauce instead of salsa.

THE RECIPE:

3/4 lb. ground beef
1/2 package taco seasoning
1/2 c. chunky salsa
1 can large refrigerated biscuits, such as Pillsbury Grands
1 c. shredded cheese
Sour cream and extra salsa for dipping

Brown ground beef with taco seasoning. Drain any excess fat, then add salsa. Mix in cheese. Roll out biscuits into six-inch circles. (Use cooking spray so the dough doesn't stick.) Spoon in meat filling, fold over, and press edges together. Place on greased cookie sheet. Bake at 375 degrees for 12 to 14 minutes, or until golden. Serve with sour cream and salsa for dipping.

Honey, lime home!

These honey-lime chicken enchiladas are fabulous. What a unique twist on an old favorite. I have already made these twice since I snagged the recipe from my friend at phe/MOM/enon, who got it from someone else. This is one of those recipes that require me to repeat the ingredients when I hear about them: "honey and lime, huh?" Now that I've experienced it, my answer is an ecstatic "you betcha!"


THE RECIPE:

6 Tbsp. honey
6 Tbsp. lime juice
1 tsp. chili powder
1/2 tsp. garlic powder
1 lb. chicken, cooked and shredded (I boil it)
8-10 flour tortillas
1 lb. monterey jack cheese, shredded (I used colby jack)
10 oz. green enchilada sauce
1 c. cream

Mix the first four ingredients and toss with chicken in a plastic baggie. Marinate for a half-hour or more, if desired. Fill tortillas with chicken mixture and cheese, reserving about 1 cup cheese to sprinkle on top. Mix green sauce with cream and any leftover marinade. Pour over enchiladas, ensuring that it seeps underneath. Sprinkle with cheese and bake, uncovered, at 350 degrees for 30 minutes.

*Note: Even mild green sauce is quite spicy for this wimp, so the cream really helps downplay the heat.

Muy bien

This is a great take on taco salad. It uses Fritos, of course, as many great taco salads do. The new ingredient for us was Catalina dressing. It's like a Mexican hat dance in your mouth. And truly, you can't get much easier than this.

THE RECIPE:

1 lb. ground beef
1 can diced green chiles
1 medium onion, chopped
1 can corn, drained
1 can black beans, rinsed and drained
1 bag lettuce or 1 head lettuce, chopped
1 10-ounce bag regular Fritos
Chopped fresh tomato
Catalina dressing

Brown ground beef with chiles and onion. Toss together with remaining ingredients and top with dressing. Feel free to adjust ingredients to suit your family's taste buds. Serves 6.

*Note: If you anticipate having leftovers, you may consider letting individuals mix their own ingredients so you can store them separately afterward. The Fritos will become soggy in the fridge.

Texas caviar

This salsa-of-sorts is delicious. It gets rave reviews from everyone who tries it. I've decided it's acceptable to eat this for dinner.

THE RECIPE:

1 can each black, pinto and white beans
7 Roma tomatoes, chopped
1 bunch cilantro, chopped (discard stems)
1 bag frozen white corn
Half a red onion, finely diced
1 Anaheim pepper, seeds removed, finely diced
1 pkg. dry Italian dressing (and ingredients to make it)
Juice of 2 limes

Rinse and drain beans. Rinse corn to thaw and mix with beans in large bowl. Add cilantro, tomatoes, onion and pepper. I use a mini-chopper for the onion and pepper. Make dressing according to package directions and add to other ingredients. I use a mini-chopper for the dressing, too, so it's creamy-looking and frothy. Refrigerate salsa so flavors mix. Add lime juice before serving.

By the way, Anaheim peppers are supposedly less spicy than jalapenos, but I've substituted a jalapeno in this recipe and haven't noticed a difference.

Hankering for Cafe Rio?

Well, I guess you could always go to Cafe Rio. But if you want to stay home and still enjoy the masterful taste of sweet pork, here's the recipe. It's so darn easy for something so rewarding. You've also got to make the avocado-ranch dressing. Feel free to make a burrito or toss it all in a salad. Yum!

THE RECIPE:

2 lbs. pork roast (I used center-cut pork loin roast)
1 1/2 c. salsa (I used Pace picante sauce)
1 1/2 c. brown sugar

Place roast in slow cooker. Mix salsa and brown sugar, and pour over roast. Cook on high for 6 hours or low for 10 hours. Shred pork.

1 avocado
Handful cilantro
2 Tbsp. lemon juice
2 Tbsp. lime juice
1 jalapeno, seeds and membranes removed
1/4 c. sour cream
1/4 c. mayonnaise
Half a packet of dry ranch dressing mix
Milk for thinning to desired consistency

Mix ingredients in a blender. Refrigerate before using so flavors can mix.

One-dish fiesta

Tamale pie casserole is a twist on the Mexican food we're used to making. It's tasty and easy to make.

THE RECIPE:

3/4 c. cornmeal
1 egg
1 1/2 c. milk
1 lb. ground beef
1 Tbsp. mild taco seasoning (more or less)
1/2 c. chopped onion (optional)
1 small can enchilada sauce
1 c. chunky mild salsa
2 Roma tomatoes, chopped
1 can corn, drained
1 can sliced olives, drained
1 1/2 c. grated cheese
Chopped green onions (optional)

Preheat oven to 350 degrees. Combine cornmeal, egg and milk, then set aside. Brown ground beef sprinkled with taco seasoning in large skillet, then drain fat. Add onion, enchilada sauce, salsa, tomatoes, corn and olives. Simmer over medium heat for five minutes. Pour into 9 x 13 pan, then mix in cornmeal batter. Bake about 50 minutes. Sprinkle with cheese and green onions, and bake until cheese is melted.
