All the right attributes
Everyone loves this strawberry pretzel Jell-O. It works as a dessert, or it could be a side dish for a holiday cook-out. It has all the best attributes -- creamy, salty, sweet, crunchy. Note that this dish requires several hours of refrigeration time.
THE RECIPE:
2 c. chopped/crushed pretzels
1/4 c. sugar
2/3 c. butter, melted
8 oz. cream cheese
1/4 c. sugar
8 oz. Cool Whip
6 oz. package strawberry Jell-O
1 c. boiling water
1 c. cold water
1 lb. fresh strawberries, sliced
Chop pretzels in food processor. You'll get a nice mix of chunks and powder. I found about 4 cups whole pretzel sticks reduced to 2 cups chopped. Mix with sugar and butter, then press into 9x13 baking dish. Bake at 350 degrees for about 15 minutes. Let cool completely.
Place cream cheese and sugar in dish and microwave until soft so sugar can easily be stirred in. Let stand to room temperature. Stir in Cool Whip. Spread over pretzel crust, ensuring that cream mixture reaches edges of baking dish and seals off access to pretzels. Refrigerate several hours.
Stir Jell-O into boiling water until completely dissolved. Stir in cold water, then sliced strawberries. Pour over cream layer, which should be firm enough by now to handle liquid. Arrange strawberries evenly. Refrigerate about 3 hours, or until Jell-O is set.

Satisfying stroganoff
This is a simple and delicious recipe for stroganoff. It's fresh and well seasoned. My kids love mushrooms, so they devour this meal. It can be served over noodles or rice. Although the picture above shows enriched noodles, I usually use whole wheat, which I highly recommend.
THE RECIPE:
1 lb. ground beef
1 onion, chopped
1 green bell pepper, chopped (optional)
16 oz. mushrooms, rinsed and quartered
6 oz. reduced-fat cream cheese
3 Tbsp. cornstarch
1/4 c. milk
3 c. beef broth
1 tsp. salt
1/2 tsp. black pepper
1/2 c. sour cream
In a very large skillet -- I use my electric skillet -- start breaking up and browning beef. Add onion, pepper and mushrooms. Cover and cook for several minutes, until beef is cooked through and vegetables are tender. Add cream cheese and cover to melt.
In a small bowl, stir together cornstarch and cold milk until smooth. Pour broth into skillet, then add cornstarch mixture and stir well. Add salt and pepper. Cover and bring stroganoff to a boil. Uncover, add sour cream and simmer until thickened. The longer it sit, the thicker it gets. Serve over rice or noodles.
*Note: This recipe can be made gluten-free with very little hassle.

Beautiful blueberries
For Mother's Day breakfast, we ate this blueberry strata, which I got from the Kraft website. It's a breakfast you assemble the night before, and it's a snap to throw together. It was good, and we were all happy to have something new, but I have to say it wasn't as flavorful as I expected. We couldn't really taste the cinnamon and syrup added into the egg mixture. The blueberry syrup poured on top, however, made the dish worthwhile.
I would make this again, but I might fiddle around with the recipe. Let me know if you have any suggestions! By the way, my young family only needed half the recipe.
THE RECIPE:
12 slices white bread, cut into 1/2-inch cubes (about 8 cups)
1 c. fresh or frozen blueberries, divided
8 oz. cream cheese
8 eggs
2 1/2 c. milk
2 tsp. ground cinnamon
1/3 c. maple-flavored or pancake syrup
1/4 c. packed brown sugar
Spread half of the bread cubes onto bottom of greased 9x13 baking dish. Sprinkle with blueberries. Pinch off small chunks of cream cheese and sprinkle around, then top with other half of bread cubes.
Whisk together eggs, milk, cinnamon, syrup and sugar. Pour over bread. Cover with foil and refrigerate overnight.
Heat oven to 350 degrees. Bake strata, covered, for about 30 minutes. Uncover and bake 30 to 35 minutes more, or until center is set. Pour blueberry syrup on individual servings.
Blueberry syrup:
2 c. fresh or frozen blueberries
1 1/3 c. maple-flavored or pancake syrup
Combine blueberries and syrup in small saucepan and bring to boil, stirring constantly. Reduce heat and simmer for about 1 minute, stirring constantly. Pour over blueberry strata.

Fruit dip
I love dips and sauces. I guess everything is more fun when it's gussied up. My friend Natalie introduced me to this yummy fruit dip. It tastes perfect on apples. Strawberries are a little too juicy and cover up the dip's flavor. Or you could just eat the dip with a spoon...
THE RECIPE:
8 oz. cream cheese, softened
6 oz. yogurt, any flavor
7 oz. marshmallow cream
4 oz. Cool Whip
Beat cream cheese and yogurt with electric mixer. Add marshmallow cream, then Cool Whip. Store in refrigerator. Makes enough for a party.
*Note: I used reduced-fat ingredients.

Finger food
I bought jumbo olives on a great Thanksgiving sale and thought to myself, "I should stuff these with something!" How about cream cheese and spices? The stuffed olives turned out to be a really yummy and fun appetizer. The seasoning options are endless, so use whatever you want. We made a southwest kind and a ranch kind.
THE RECIPE:
3 cans jumbo black olives, well drained
4 ounces cream cheese, softened
Seasoning option #1
1/4 tsp. chili powder
1/4 tsp. cumin
1/4 tsp. salt
Seasoning option #2
1/2 tsp. spicy brown mustard
1/8 tsp. dill weed
1/8 tsp. dried basil
1/8 tsp. salt
Mix cream cheese with your choice of seasonings, then spoon into piping bag fitted with flower tip. Pipe mixture into olives, then refrigerate about an hour so seasonings can meld.

Cinnamon rolls reinvented
THE RECIPE:
Cinnamon swirl
Cream cheese glaze
Pancake batter
Heat a large skillet or griddle to medium heat. On my electric stove top, No. 4 worked great. Make pancakes as usual, except squirt a swirl of cinnamon onto each when bubbles start forming on the batter. Keep the swirl about an inch away from the edge of the pancake.
Flip pancakes when bubbles pop and bottom of pancake is golden brown. Cook a couple of minutes more, until other side is nicely browned. Wipe out pan with paper towel, then repeat the process. Serve pancakes with cream cheese glaze. Makes about 8.
4 Tbsp. butter, very softened
1/4 c. plus 2 Tbsp. packed brown sugar
1/2 Tbsp. ground cinnamon
Stir together ingredients and spoon into a piping bag or thick plastic baggie with tip cut off. Tip should have about a 1/4-inch opening.
Cream cheese glaze:
4 Tbsp. butter, melted
2 ounces cream cheese, softened
3/4 c. powdered sugar
1/2 tsp. vanilla
Milk for thinning
Whisk butter and cream cheese together. Add powdered sugar and vanilla, then thin with milk as desired.
Pancakes: (or use your own batter)
1 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1 c. milk
1 egg
1 Tbsp. cooking oil
Mix dry ingredients, then add wet ingredients and mix until just moistened.

St. Patrick's Day dessert
We ended the night with the lime Jell-O cream cheese pie you see above. It is the easiest thing in the world to throw together, and its thick, creamy, Jell-O-y filling is delicious. You must serve it with fresh whipped cream. Plan ahead for refrigeration time.
THE RECIPE:
1 graham cracker pie crust
1 3-ounce package lime Jell-O
1 c. boiling water
8 ounces light cream cheese, softened
2 Tbsp. lime juice
Dissolve Jell-O into boiling water. Add cream cheese and beat with electric mixer until smooth and combined. Add lime juice. Pour into pie crust. Refrigerate at least four hours, until set.

Swirl of sweetness
THE RECIPE:
1 8-ounce brick cream cheese, softened
1/2 c. butter, softened
1 tsp. vanilla
2 tsp. raspberry extract
6 c. powdered sugar
Beat together first four ingredients, and then add powdered sugar. You should have a nice thick frosting, which is perfect for piping. Makes enough for about four dozen cookies.

Enchiladas with texture
THE RECIPE:
4 c. diced chicken breasts
3/4 c. slivered almonds
1/2 c. chopped onion (sometimes I use green)
2 4-ounce cans diced green chilies
6 oz. cream cheese
2 Tbsp. milk
1/2 tsp. ground cumin
10 flour tortillas
2 15-ounce cans cream of chicken soup
12 oz. sour cream (I used light)
2 c. milk
1 1/2 c. shredded cheese
In large skillet, cook chicken. Add onions and 1/2 cup of the almonds, then saute. Add 2 tablespoons green chilies. In a medium bowl, combine cream cheese, 2 tablespoons milk and cumin. Add chicken mixture. Spoon into tortillas, then roll and place side by side in 9x13 baking dish. In medium bowl, combine soup, sour cream, 2 cups milk and remainder of chilies. Pour over tortillas. Cover and bake at 350 degrees for 35 minutes. Sprinkle with cheese and remaining 1/4 cup almonds. Bake, uncovered, 5 minutes more. (Sometimes I put the cheese in the tortilla filling instead.)

A marvelous mistake
I started out making fudge -- white chocolate cherry cheesecake fudge. I had seen the recipe in the Deseret News and had to try it. It was the easiest thing ever to throw together. The problem is, my fudge didn't set. Instead, it was more like thick frosting, but it tasted delicious to say the least. All I can figure is that I didn't drain the cherries well enough. Anyway, I got creative and decided to use my "fudge" as a filling for mini tarts. I thought about giving some to the neighbors, but then I ate them all. Give it a shot. If you end up with fudge, great! If not, you know what to do. Or just eat it with a spoon. It's that good.THE RECIPE:
1 pound white chocolate in chunks, or real white chocolate chips
8 ounces cream cheese
1 c. drained maraschino cherries, quartered
Carefully melt chocolate in double boiler or in microwave on half power, stirring frequently. Place cream cheese in bowl and microwave about 1 minute to soften. Beat cream cheese, then add white chocolate and blend well. Fold in cherries. Spread in 8x8 pan that's been buttered or lined with foil or plastic wrap. Chill several hours or overnight, until firm. Store, covered, in refrigerator.
Tart shells:
1/2 c. butter, softened
3 ounces cream cheese, softened
1 c. flour
1 Tbsp. sugar
Beat butter and cream cheese until combined. Add sugar, then flour. Press pastry evenly into bottom and up sides of ungreased mini-muffin tins. Bake at 325 degrees for about 20 minutes (I think -- maybe start watching a few minutes early and get them out when they are golden). If you don't have mini-muffin tins, maybe just try regular ones. I bet it would be great. You'd just put a lot more filling in them, but it would be delicious that way!
Fill tart shells with "fudge" and refrigerate until ready to use.

A surprise inside
These pumpkin cupcakes are divine. I stuffed myself with them. They have a sweetened cream cheese filling and a crispy streusel topping. I can't imagine anyone not liking these. Plus, 'tis the season for all things pumpkin. As is the case with much of the food I make, I got this recipe from My Kitchen Cafe.THE RECIPE:
Filling:
8 ounces cream cheese, softened
1 c. powdered sugar
Cupcakes:
3 c. flour
2 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
1 1/2 tsp. cloves
3/4 tsp. ginger
1 tsp. salt
1 tsp. baking soda
4 eggs
1 1/4 c. oil (I used canola)
2 c. sugar
2 c. pumpkin puree
Streusel:
1/2 c. sugar
1/4 c. flour
4 Tbsp. cold butter, cut up
1 1/2 tsp. cinnamon
To prepare filling, whip cream cheese with powdered sugar until smooth. Form into a log on plastic wrap or greased foil, ensuring that diameter is small enough to fit into well of muffin tin. Wrap tightly and freeze about 2 hours, or until slightly hardened.
To make cupcakes, mix dry and wet ingredients separately, then mix together until just combined.
To make streusel, mix ingredients with pastry blender or fork until you have crumbs.
Preheat oven to 350 degrees. Line muffin tins with paper liners. Fill each well a third of the way with batter. Remove cream cheese log from freezer and cut into 24 slices. Place each slice on top of batter in wells and press down gently. Divide remaining batter over tops of cream cheese slices. Sprinkle with streusel. Bake for 18 to 20 minutes, or until toothpick inserted into top part of cupcake comes out with moist crumbs. Cool completely before serving.

It's OK to eat with your hands
These chicken taquitos make a fun, quick and delicious dinner. I am a huge fan! Even kids seem to like them. Plus, they're baked instead of fried, which increases their health value. You could make the filling ahead of time and refrigerate it. I got the recipe from My Kitchen Cafe, although I tweaked it according to the ingredients I had on hand. Dip them in salsa, sour cream and guacamole.THE RECIPE:
4 ounces low-fat cream cheese, softened
1/4 c. green salsa (I used red)
1 Tbsp. lime juice
1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp. onion powder
1/4 tsp. garlic powder
3 Tbsp. chopped cilantro*
1 green onion, finely sliced
2 c. chopped cooked chicken
1 c. shredded cheese
Corn tortillas
Salt
Cooking spray
Heat oven to 425 degrees. Line baking sheet with foil and spray with cooking spray. Mix filling ingredients in order. Place three tortillas between damp paper towels and microwave for 45 seconds until really pliable. Place about 3 Tbsp. mixture near edge of tortilla and roll up fairly tightly. Place seam-side down on baking sheet. Spray tops lightly with cooking spray and sprinkle with salt. (The original recipe recommends kosher salt.) Bake about 15 minutes, or until crispy and golden on edges.
*I didn't have cilantro, but they were still delicious. I love cilantro, though, so I will try it next time.

Orange you glad you saw this?
If your sweet tooth is in the mood for something different, try this orange-flavored cream cheese frosting. I threw together a carrot cake from a mix and topped it with this delectable treat. The frosting was the best part. If I had had a real orange on hand, I would have sprinkled orange zest on the finished product. Keep this recipe in mind for spice cake, carrot cake, pumpkin desserts -- anything really.THE RECIPE:
8 ounces cream cheese, softened
1/2 c. butter or spread, softened
2 tsp. orange extract*
6 c. powdered sugar (more or less)
Beat cream cheese, butter and extract with mixer. Gradually add powdered sugar to reach spreading consistency. This is enough to frost the tops and sides of two 9-inch layers. You could easily halve it if desired.
*It's fun to keep a few different extracts on hand to experiment with.

Highly appetizing appetizer
These stuffed mushrooms are so wonderful. I just love them. Sometimes I crave them. I've been making them for years, and I have heard only compliments -- even from people who say they usually don't like mushrooms. Everyone thinks they are SO good and asks how to make them. They are incredibly easy. I got the recipe from my cousins, so the credit goes to them!THE RECIPE:
4 8-oz. packages whole mushrooms
1 16-oz. roll uncooked pork sausage*
8 oz. plain reduced-fat cream cheese
Preheat oven to 375 degrees. Mix softened cream cheese with uncooked sausage. Scrub your hands well, and then dive in! Rinse mushrooms and twist out stems. Spoon filling into mushrooms, then arrange in rimmed, ungreased pan lined with foil for easier cleanup. Bake for 30 to 40 minutes. Sausage will get cooked through and be nicely browned on top.
*I used Farmland original pork sausage, because I got a good deal. My cousins use Jimmy Dean hot sausage.

Fajita fiesta
We made some really yummy chicken fajitas the other night. One of the best parts was a big old helping of fresh fried bell peppers from our garden. They added a light crunch and a nice punch of flavor. The other tasty part was the creamy sauce for the chicken. We just mixed salsa with cream cheese, and it tasted great.THE RECIPE:
Sliced bell peppers
Splash of olive oil
Salt and pepper to taste
Garlic powder to taste
2 chicken breasts, sliced into inch-wide strips
1/4 c. cream cheese, softened*
1 c. salsa*
Tortillas
Desired toppings (chopped tomato, avocado)
In frying pan, toss peppers with olive oil, salt and pepper, and garlic powder. Fry over medium heat until crisp-tender. It takes about ten minutes. Meanwhile, in a different pan, cook chicken, then toss with cream cheese and salsa until well coated. Layer chicken and sauce, then peppers and additional toppings on a tortilla. Wrap it up, and enjoy!
*Note: I'm not sure about the amounts I used for my sauce, so this is just a guess. The consistency of your salsa will make a difference. It should be pink when it's ready.

Love at first sight
My daughter recently told her grandma: "My mom is addicted to chocolate." What a smart girl. It's very true. Chocolate cake is divine with this chocolate cream cheese frosting. Store-bought frosting doesn't even hold a candle to this. Boxed cake mixes are fine, though. You'll want to walk around with a fork if you have this decadence at your house.THE frosting RECIPE:
1 8-ounce package cream cheese, softened
1/2 c. butter or spread, softened
2 tsp. vanilla
1/2 c. cocoa powder
5 to 6 c. powdered sugar
Milk to thin, if desired
Beat cream cheese, butter and vanilla together. Add cocoa. Gradually add powdered sugar until you reach desired consistency. Thin with a couple of tablespoons of milk if necessary. I like mine to be really spreadable and smooth, not thick and pasty.

Mommy, I love this food
This is one of my 3-year-old's favorite foods. We call it creamy Italian chicken. The first time I made it, she said, "Mommy, I love this food. Thank you so much for making it!" Needless to say, I have made it many times since. I know a lot of people who make this dish, and there are many ways to do it. I think most people use a slow cooker, but I usually just boil my chicken. It's faster, and a lot of the fat boils off so I don't have to cut it off while it's raw. I hate working with raw chicken. Just put frozen chicken right into a pot of water, then boil for about 20 minutes.THE RECIPE:
2 boneless chicken breasts, boiled then chopped*
1 packet powdered Italian dressing
1/4 c. melted butter
1 can cream of mushroom soup
4 oz. cream cheese, softened
Milk for thinning (maybe 1/2 cup?)
Cooked rice (or noodles would work)
Mix chopped chicken with melted butter and Italian seasoning. I usually just put it all in a baggie and mush it together. For best results, make ahead and refrigerate so flavors mix. Combine chicken mixture with soup, cream cheese and milk, then heat through. Serve over rice.
*If you choose to use a slow cooker or oven, then cook raw chicken in butter and seasoning. Add the remainder of ingredients later, before serving.

You can't eat just one
The recipe for these fudge brownie tassies comes from Better Homes and Gardens. They are yummy and unique, but mostly they're so cute! Next time I might add a little sugar to the pastry dough. We thought maybe it could use some sweetening. Other than that, they were great.THE RECIPE:
Pastry:
1/2 c. butter, softened
3 oz. cream cheese, softened
1 c. flour
Beat together butter and cream cheese, then add flour. Press a rounded teaspoon of pastry evenly into the bottom and up the sides of 24 ungreased tiny-muffin tins (you know, the kind used for tarts).
Brownie filling:
1/2 c. semisweet chocolate chips
2 Tbsp. butter or spread
1/3 c. sugar
1 egg
1 tsp. vanilla
In small saucepan, heat and stir chocolate chips and butter over low heat until melted. Remove from heat, then stir in sugar, egg and vanilla. Drop about 1 teaspoon of mixture into each pastry cup. Bake at 325 degrees for 20 to 25 minutes or until pastry is golden and filling is puffed. Makes 24.
P.S. You could nestle a nut inside each brownie before baking. You could sprinkle powdered sugar on top. You could top with a swirl of whipped cream. The variations are endless!

Crazy cranberry craving
This cranberry salsa is addictive, festive and every other wonderful -ive. The red from the cranberries is deliciously complemented by green flecks of cilantro and spread over a combo of cream cheese and sour cream. Serve it with tortilla chips. I'm telling you, this dish gets nothing but praise.THE RECIPE:
8 oz. cream cheese (I use reduced-fat)
1/2 c. sour cream (I use reduced-fat)
12 oz. bag fresh cranberries, rinsed
Half a medium onion or 3-4 green onions
Half a cilantro bunch
1 jalapeno or Anaheim pepper, seeds removed
2 cloves garlic, pressed
1 tsp. salt
1/2 c. sugar
Juice of 2 limes
Mix cream cheese and sour cream and spread on platter for bottom layer. Blend everything else in food processor to form top layer. Serve with tortilla chips. Refrain from overindulgence.
